MAINTAINERS: Update pstore maintainers

Update pstore to better reflect reality of active contributors:

- Remove Anton and Colin (thank you for your help through the years!)
- Move Tony to Reviewer
- Add Guilherme as Reviewer
- Add mailing list
- Upgrade to Supported
