bcachefs: Update fsck for snapshots

This updates the fsck algorithms to handle snapshots - meaning there
will be multiple versions of the same key (extents, inodes, dirents,
xattrs) in different snapshots, and we have to carefully consider which
keys are visible in which snapshot.
